What's for Supper - Grilled Salmon, French Green Lentil Salad and Caprese Salad

Some of you (Gloria) are very interested in what we eat up here. I am a fishetarian (basically, a vegetarian, but I eat some fish and seafood), and my husband is an omnivore but is gluten-sensitive. So, we have an interesting diet. But we've come up with some fabulous menus in the last few years, and we rarely go out to eat because the best food is usually here at home!

Tonight, Bruce grilled salmon marinated in olive oil, Old Bay, dried dill and black pepper.  I made a French green lentil salad with chunks of feta and whole pickled beets, with a dressing of olive oil, salt, and the zest and juice of a lemon.  I also made a Caprese salad with roma tomatoes, fresh basil leaves and marinated fresh mozzarella.


I love French green lentils - they are so beautiful! They look like little pebbles...

We have some lentil salad left over, and tomorrow I'm going to add some finely diced red onion, more beets and more feta. This is what I love about cooking. You try something, and it's good, but then you figure out how to make it BETTER!

  1. You could put cheese on actual pebbles and I would eat them. Mmmmmmm.....cheeeese. D'oh!
